Sometimes you just need a quick and easy dessert that requires no oven. I knew Matt wanted to work in the kitchen but I wanted to make a dessert for a graduation party I was going to. And so, I needed something quick and easy. As luck would have it, Averie Cooks posted a collection of no bake desserts. This included her recipe for Nutella Brownie Truffle Bites. I didn’t have Nutella but I did have Speculoos Cookie Butter, which is just as good, if not better. I also crushed up Speculoos cookies for some crunch.
Here are my Cookie Butter Chocolate Truffle Squares (recipe slightly adapted from Averie Cooks’ Nutella Brownie Truffle Bites):
- ¼ cup plus one teaspoon Speculoos Cookie Butter
- ¼ cup unsalted butter, softened
- ⅓ cup unsweetened cocoa powder
- ¼ cup confectioners’ sugar
- ¼ cup all-purpose flour
- 2-3 Speculoos cookies, crumbled
Line a 6 inch square cake pan with aluminum foil and spray with non-stick baking spray. (If you don’t have a 6 inch pan, click here to read about Averie’s suggestions to use an 8 inch pan. I just happen to have an unhealthy amount of cake pans). Place the first five ingredients in a medium-sized mixing bowl to combine. I found that it worked best to use the back of spoon to help mix the butter with the other ingredients. I found it even easier to just get in there with my hands to combine the ingredients.
Once the ingredients are completely combined, add the cookie crumbles (you can even press them into the top once the mixture is in the pan). Again, I just used my hands for this. Messy but most effective.
Press the mixture evenly into the pan. Cover and put in the refrigerator for at least two hours.
Cut and enjoy!!!
