Having two kids, it’s definitely not easy to go out whenever we want to anymore. And too often, it is not long after we eat dinner in front of the TV that I am ready to go to bed, which is about 9:00. So Date Night In began. It first started on Valentine’s Day. I wanted to make a dinner that is not something I could make on a regular basis, so it would be special. And with dinner comes an appetizer and dessert, of course.
On Valentine’s Day, the first Date Night In, the menu consisted of Bake Mozzarella Sticks by Skinnytaste, Baked Tortellini with Chicken Gratinani by A Family Feast, and Molten Chocolate Cakes by Dessert for Two. The mozzarella sticks turned about to be a cheesy, yet delicious mess. Baked Tortellini with Chicken Gratinani is my go to dinner at Bertucci’s, so I was extremely excited to come across it on Pinterest. This recipe added bacon, and the dish was amazing! I wish I took a picture! And the Molten Chocolate Cakes were perfect because the recipe is for two people. And quick to make. I was able to make the batter and throw them in the oven while Matt started cleaning up from dinner. Again, I wish I had a picture! Ugh!
After this night, I realized how much fun I had choosing recipes and making the dishes. And it was nice to sit at the dinner table and actually enjoy each other’s company and the actual food. So that brings me to Date Night In #2. For this one, I made bruschetta for an appetizer.
The main dish was a five cheese mac and cheese from the Seriously Delish cookbook (How Sweet Eats) and a side of roasted brussels sprouts.
That’s right, I ate brussels sprouts for the first time and loved them! I can cross that off my Food Bucket List!
Dessert was a delicious Black Bottom Peanut Butter Pie from the Dessert For Two cookbook.
Doing Date Night In was not my intention. I just realized I had fun doing it and it is something I will continue to do every few weeks. I look forward to sharing #3!
