Has it really been 4 months since Matt and I had a date night in?! It has. With summer, we were always on the go during the weekends so we really didn’t stop and think about doing one. This latest date night was a last minute one. We had planned on having pizza but I decided to add an appetizer and dessert. It wasn’t easy. It was on a Friday night and I didn’t get home until about 6. I had just a couple of hours to make an appetizer, pizza dough, and dessert all while playing with the kids and getting them ready for bed. But I did it!
It was definitely no gourmet dinner, but it was a dinner that we enjoy having and seemed appropriate for a Friday night. And it was one that we could do together.
For the appetizer, I made a black bean dip. This was the first time I’ve ever had this kind of dip and it was so good!
It’s not the most appetizing looking dish, so no close up of the actual dip. And I think that’s why it took me so long to try it, but I’m glad I finally did.
For the main dish we made a bbq pulled pork pizza with red onion, mozzarella cheese and smoked gouda cheese. I had pulled pork in the freezer so that made it easy. I used this recipe by Dessert for Two for the pizza dough. It’s perfect for 2 people and just the right size for a 10 inch cast iron skillet. The actual pizza recipe was inspired by this one from Sally’s Baking Addiction.
And of course a fancy side dish of Trader Joe’s tater tots!
The pizza was amazing. Nothing better than a homemade one.
For dessert, I made a vanilla cake with chocolate frosting. This recipe is from the Fixate cookbook.
Made with almond and coconut flour, this is one of the best tasting cakes I’ve ever had!
Because the pizza was on the heavy side with all that delicious cheese, I tried to keep the appetizer and dessert on the lighter side, or more healthy.
This was a successful date night in. It was all homemade (except for the tater tots) and it was something we did together. I wonder what the next date night in will bring!
