I was a little slow this week at getting to the Sundays with Joy recipe. Honey Mustard Roasted Cashews is a simple recipe with minimal ingredients. However, I did not have two of the main ingredients, ground mustard and cashews. And to be honest I didn’t want to spend the money for just this recipe. So I took some time to figure out how I could modify or just be inspired by Joy’s recipe. Then I thought I could use the pumpkin seeds I would be roasting. Perfect! However, as you know, that did not work out so well. They burned. Ok, fine. I probably could have opened my cabinet and tried a couple of spices and use regular mustard somehow. But for some reason, I just didn’t want to. I wanted to follow the recipe. I decided to see if anyone I know had ground mustard and/or an abundance of cashews they didn’t need. I had success with the ground mustard. I broke down and bought cashews.
This recipe came together in no time. I did cut the recipe in half because I didn’t have enough cashews. Simply mix together the ingredients and coat the cashews. Place the cashews on a baking sheet and bake. Of course, they were on the verge of burning right before I took them out. But I saved them just in time.
I have to say, these are really good! I really can’t remember the last time I ate a cashew. Or if I even have ever had one. These would make the perfect party snack.
