A Birthday Dessert

I am turning 31. This is crazy. I definitely don’t feel like a 31-year-old. I still love New Kids on the Block for crying out loud. But having a birthday is a great excuse to have dessert. Or should I say extra dessert.

Of course I made myself a birthday dessert and wanted to try something new.  I came across a recipe for Vanilla Funfetti Cake Roll from Shugary Sweets a while back and thought it would be perfect to try for my first one.  I have never made a cake roll because I find it intimidating. Well that is not accurate. I took a baking class at a local technical high school a few years back and we made one. But I was part of a group working on one recipe and there was an instructor.  I don’t think this counts.  My mom makes a pumpkin roll every fall/winter that tastes amazing and she makes it look so easy.

The recipe calls for a 10×15 jelly roll pan.  Of course I have every size pan but the size that one.  I thought I would try it in a 9×13 pan and hope for the best.  You will see how that turned out.

What I find most intimidating about making a cake roll is using the dish towel and rolling the cake.  I just picture it not going well.


I was pleasantly surprised to see how easily the cake rolled up.


After it cooled I had to roll it out to put the filling in.  This is where using the wrong pan size caused a problem.  Because it was smaller than what the recipe called for, the cake was too thick and it started to split.

I kept going though.  I thought that once it was all rolled up with the fresh whipped cream filling, it would stay as is.


I was pleasantly surprises that the cake roll stayed put.

It doesn’t look that bad!  It actually looks pretty good if I say so myself!

Despite the cracks in the cake, I would say that this cake roll was a success!  I am confident that when I try it again in the correct pan, it will come out perfect.

This Vanilla Funfetti Cake Roll tasted great!  I can’t wait to try to make more.  I am no longer intimidated!  And of course eating this makes turning 31 a little better.

The Twins’ 30th Birthday

I have been meaning to write about this cake I made last week.  It is a birthday cake I made for longtime friends Colleen and Keith.  They are twins who lived right down the street from me growing up.  Needless to say, I have known them since kindergarten, riding on the same bus and being in each other’s classes through elementary school and up.  Colleen is one of my closest friends.  I miss the days of walking to her house in a snow storm when school was cancelled.  Or watching Dirty Dancing and/or Grease every weekend.  Or walking to the Korner Kitchen after school for chicken finger dinners.  I know, we were such wild and crazy teens.

When Keith’s wife Erin started to plan their (supposed to be) surprise 30th birthday party, I jumped at the opportunity to make a cake for them!  I wanted to make something that was gender neutral so my original thought was to make it an 80’s theme cake.  When I started decorating, it evolved into what you see here.


The “30” is edible, made from a chocolate mold.  The cake is half chocolate, half vanilla filled and frosted with buttercream.  I used a combination of fondant and buttercream for the decorations.

the party was a good time and it was nice to get out and be with friends.

Hello Kitty and Red Sox

This post will be short and sweet.  I had fun this week because I got to do two cakes, both very different and ideas I haven’t done yet.  The first cake I did was for Matt’s 9-year-old cousin Ava.  She wanted Hello Kitty and zebra print on the cake.

I think it came out pretty good.  However!  Do you notice anything missing?  I didn’t realize this until two days later when I was looking at a Target flyer and saw a Hello Kitty lunch box.  I forgot the whiskers!  So mad!  I remember thinking that I had to put them on too…ugh!  Matt’s aunt didn’t say anything and she did not say if Ava noticed so that’s good.  That’s what I get when I try to do this stuff with a one year old running around.  Lesson learned.

The second cake I did was for my friend Val.  She had an engagement party this past weekend and wanted to surprise her fiance with a Red Sox cake because he is a huge fan (even if they do stink right now).  Val instructed me to make the cake look like it threw up Red Sox.

I had a hard time with this one only because I had so many ideas I couldn’t decide.  And I didn’t want to just throw a bunch of stuff on it.  So I decided to not have only baseball, but a lot of Fenway itself on the cake, such as the score board, Citgo sign, and Yawkey Way sign.  I was happy with the way it came out.
