Cookies n Cream Fudge – The Christmas Version

So while I am on my Oreo cookie kick, let’s talk about fudge.  I had some leftover Winter Oreos from when I made the Oreo and Pretzel M&M Bars.  And because Christmas is the season of making lots of fudge, I made Cookies n Cream fudge.  This recipe is extremely simple and can be found right on the Eagle Brand website.

close upThe red cream in the Oreos created the swirl in the fudge.  Gives the idea that it is peppermint but it is just really festive!  If you want to make it peppermint and can’t find the Candy Cane Oreos (which I have yet to do!), you could always put a small dash of peppermint extract in or some crushed up candy canes.

The recipe calls for white chocolate baking squares.  I find them to be way too expensive so I used white chocolate chips instead.  Also, I didn’t use as many Oreos as what the recipe calls for.  It’s really because I didn’t have enough but I don’t think I needed that amount.


  • 18 ounces of  white chocolate chips
  • 1 can of sweetened condensed milk (14 ounces)
  • 1/8 teaspoon of salt
  • About 12-15 Oreo cookies, coarsely chopped
  1. Prepare an 8X8 square pan by lining it with foil – leave a little extra over the sides to create “handles.”  Spray with non-stick baking spray.
  2. In a medium saucepan over medium heat, melt the white chocolate chips, sweetened condensed milk, and salt together until smooth.  (Add optional peppermint extract or candy canes here.)
  3. Remove the pan from heat and fold in the cookies.
  4. Pour into the pan and spread it evenly.
  5. Chill in the refrigerator for at least two hours.
  6. Once the fudge is firm, remove it from the pan by lifting the foil.
  7. Cut into small squares and enjoy!

This is another quick and easy dessert you can bring to a party with a large crowd!   I brought it to my aunt’s Christmas party which is one of my favorite Christmas traditions!


Mascarpone Oreo Cookies

I can’t believe Christmas is already less than two weeks away. I can’t even handle it! I have hardly made any Christmas goodies! Never mind baking, I haven’t had a chance to decorate or do any shopping. This is so not like me.

But finally! I was able to get in the kitchen yesterday after a crazy couple of weeks! I had about 15 minutes before Luke was going to be home so I worked as quickly as I could to put together a cookie batter. This Mascarpone Oreo Snowflake Cookie recipe from the blog Kevin and Amanda is perfect to make when you don’t have a lot of time. And…mascarpone cheese in a cookie? I have never heard of such a thing. Trust me, it is amazing!

I was a little nervous while the batter was mixing because the texture of the batter appears to be very crumbly.
Don’t let this fool you! As you scoop the batter, it all seems to come together.
These remind me of little scoops of cookies n’ cream ice cream…yum! And I think they kind of taste like cookies n’ cream ice cream.
These cookies should definitely be put into your Christmas cookie rotation. They are so light but have a nice, chocolaty crunch from the Oreo cookies. Don’t forget to find the recipe here!

Cinnamon Toffee Oatmeal Cookies

It’s now the most wonderful time of the year!   The time to start baking lots and lots of cookies!  One of the things I enjoy most when baking is being able to share what I made with other people.  Family, friends, co-workers, anyone who eats dessert, etc.  I know it sounds corny, but I love hearing about how someone enjoyed eating something I made.  And what’s easier to share with others than with cookies?  I love all the cute packaging with the bags and boxes and tags and ribbons.  Christmas time is the perfect opportunity to do share baked goods.  A few years back, I had a cookie swap party which was a lot of fun.  I was really hoping to do one this year but there are not enough weekends before Christmas for me to be able to.  There is always next year.

Let’s talk about these cookies I made.  I recently came across a cookie recipe on the blog Chef in Training by Two Peas and their Pod for Cinnamon Toffee Pecan Oatmeal Cookies.  Besides gingerbread, there is nothing better than the smell and taste of cinnamon during the Christmas season.  So I thought you can’t go wrong with combining this with toffee.  These cookies looked absolutely amazing and so quick to put together, I had to give them a try.  I am very happy I did.

I did slightly adjust a couple of things.   I omitted the pecans because I didn’t have any in the house.  The second thing I changed is I used the mini cinnamon chips I bought from the King Arthur Flour Store (best day ever!).  Other than that, I followed the recipe as is, which you should definitely check out here.

When I bake, there is always something that goes wrong and the process seems to take so much longer than I anticipate.  This especially happens when I am home alone with a 1 ½ year old running around.  I sometimes rush and my focus obviously is all over the place.  I know.  I do it to myself.   So of course as I was removing the first tray of cookies from the oven, one slid off to the bottom.  As you can imagine, it wasn’t pretty and made a lovely burning smell pretty quickly, all while needing to give my son attention at that point.  I refused to shut the oven off and wait for it too cool to clean.  I took my chances, scrapped off that burnt cookie, and continued.  I don’t think I will share what happened when I tried to make muffins right before the cookies.  One situation a day is enough.

These cookies are a definite winner.  The cinnamon and toffee are such a great combination.  My husband said, and I quote, “These cookies are buttery, cinnamony, and sugary all in my mouth.”  This was a statement made as he was eating cookie #3 within about 2 minutes so I would say he liked them.
