Brown Butter Baked Donuts and a Cronut

It’s fun to have a treat once in a while. Sure there is almost always a baked good in my house.  But I mean something we don’t normally have and we get only once in a while. In my neighborhood, we have an amazing bakery, Piro’s, and an amazing coffee shop, Heavnly Donuts.  both of these locations get an occasional visit from Matt or I.  Where am I going with this?  On a recent Sunday morning, Matt suggested that I go get us breakfast treats from Heavnly Donuts.  I chose to make them instead (and I didn’t really feel like going).  And I made Brown Butter Baked Donuts with Chocolate Glaze by Joy the Baker.

These donuts are incredibly easy to make.  And if you don’t have one, I highly recommend getting a donut pan to make your own.


The batter makes six donuts which is perfect.  It is not necessary to have extra donuts hanging around.


Of course the donuts are good as is.  But what fun is a donut without some sort of topping?  Bring on the chocolate glaze and chocolate jimmies.

While we are on the topic of donuts, have you heard of the Cronut?!  It’s a donut and croissant combined and it’s a big thing right now!  You can read all about it here. I have been dying to try one and have been searching for a fairly simple recipe to try and make my own.  But I was just at a mall I don’t go to very often.  I was doing the walk as fast as I can to get out when I walked by Crumbs Bake Shop. I stopped dead in my tracks because not only was it a new bake shop I had to check out, there was a huge sign for “Crumbnuts” in the window.  I got the one with cinnamon and sugar.


It’s pretty big.

IMG_4649And it’s pretty delicious.   I asked Matt how he would describe the taste compared to a donut and he said it is more buttery and custard like.  I would have to agree.  As good as it is, this is definitely something that I will have once in a great while!  I wouldn’t say this is part of a balanced breakfast (not that donuts are any better)!  I still want to try and make them so I will let you know how it goes when I do!

Pumpkin Donut Muffins with Cinnamon and Sugar

Tis the season for fall baking, which means pumpkin and apples are going to be the main ingredients of the majority of the recipes I’ll be making.  As much as I love summer and the great flavors that go along with it, I am ready to move on.

Last week I got an email from King Arthur Flour for Pumpkin Cake Doughnuts.  It looked so easy and delicious I couldn’t wait to make it.  What’s great about this recipe is you don’t have to have them as donuts, so if you don’t have a donut pan, it’s ok!  The recipe suggests that you can make them in a muffin pan and that is just what I did.

You can find the original recipe for Pumpkin Cake Doughnuts here… but here is the recipe for “Pumpkin Donut Muffins with Cinnamon and Sugar”…

For muffins:

  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 1/2 cups granulated sugar
  • 1 1/2 cups canned pumpkin (this is pretty much a whole 15 ounce can)
  • 1 1/2 teaspoons pumpkin pie spice
  • 1 1/2 teaspoons salt
  • 1 1/2 teaspoons baking powder
  • 1 3/4 cups + 2 tablespoons Unbleached All-Purpose Flour

For topping:

  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon cinnamon
  • 2 ½ tablespoons granulated sugar

Pre-heat oven to 350 degrees.  Fill muffin tin with cupcake liners and set aside.

Combine the first 7 ingredients (all except the flour), and beat until smooth.

Add the flour and stir until combined (I found it to be a little lumpy).

Fill the liners ¾ full.  Bake for 18-20 minutes or until toothpick inserted comes out clean.  Allow the muffins to cool slightly.

For the topping, combine the cinnamon and sugar in a small bowl and put the melted butter in a small bowl.  Using a pastry brush, lightly brush the top of the muffin with butter (you need just enough to make the cinnamon-sugar mixture stick).

Dip the top of the muffin into the cinnamon-sugar mixture.

That’s it!  So easy!  You now have a wonderful, fall flavored breakfast treat with a sweet, slightly crunchy topping.  I brought a whole plate to work for the lovely ladies in my department to enjoy.   I hope you give it a try and enjoy it too!

Back to School Blueberry Swirl Donuts

Oh it’s that time again.  Back to school.  Oh sure, I’m ready, I suppose.  And I am ready to share my baked goods with my work friends who I work closely with every day.  I love sharing the desserts I make with others and they are very lucky since I see them probably more than anyone else.  I am also very excited to get the baking club going.  I hope to have a lot of interest and I can’t wait to share with you all of the great things the students do.

So to celebrate the first day back, I felt the small, but wonderful department I work in needed a breakfast treat to get us through a hectic morning we were expecting to have.  I made Blueberry Swirl Donuts with Lemon Glaze.  And they were  baked.  And had fresh fruit.  So no one could feel guilty about eating a donut, or multiple donuts.  And multiple donuts were necessary.  I found the recipe for the donuts on Wanna Be A Country Cleaver and you can find the recipe here.

I like how this has plain Greek yogurt.  I wonder how they would taste if a flavored yogurt is used.  I will have to try that.  Also, you need to use a donut pan.  I have the one from Wilton and if you MUST make these, which you probably will, you can get one at Michael’s or AC Moore with a coupon.

I made a couple of changes as I went along.  Strain the blueberries after they have slightly cooled.  This will prevent any blueberry skins from getting into the donuts.  After I put the blueberry sauce in the batter the first time, I realized that there was a lot of skin from the blueberries left.  So I scooped them all out of each donut cavity with a toothpick.

The second batch worked out much better.  Also, I tried swirling the sauce with a knife but it was too big.  Use a toothpick and you can swirl the sauce into the batter much better.  And make cool designs.

After the donuts are done baking, you dip them face down into a lemon glaze.  I sort of wish I dipped the entire donut into the glaze.  But still, they are delicious!

I think the donuts helped us all get through our hectic morning and I am happy to say it was a successful day!  See what baked goods can do ?!  They make everything better.
